How is maple syrup graded? By color and flavor.
Grade A Light Amber (Fancy) is golden in color, pleasantly sweet, and has a hint of maple flavor.
Grade A Medium Amber is darker, a little less sweet, and has more maple flavor.
Grade A Dark Amber is darker yet, more maple-y and only slightly sweet.
Grade B is the darkest of all, with the strongest maple flavor and only a hint of sweetness.
It is purported to be more nutritious than the other grades.
Nothing is done differently during processing to create the different grades.
They are a natural result of whatever sap flows from the trees during the season.
